Ciambella al Caffè & Cioccolato

Coffee & Chocolate Italian Cake

INGREDIENTS

• 3 eggs

• 230g sugar

• 180g unsalted butter

• 150ml espresso coffee 

• 380g self-raising flour

• 16g baking powder 

• 100g chocolate pieces 

METHOD

  1. Lightly grease the round tin with butter & flour
  2. Pre-heat the oven to 180°C/Gas Mark 4
  3. Measure all the ingredients and add them into the mixing bowl in this order: eggs, sugar, butter, coffee, self-raising flour (a bit at a time), backing powder and the chocolate
  4. Beat for about 2 minutes, until well blended
  5. Spoon the mixture into the round tin
  6. Bake for about 45-50 min. A fine skewer inserted in the cake should come out clean
  7. Leave the cake to cool in the tin for a few minutes, then loosen with a small knife and turn the cake out
  8. Add icing sugar on top
